Vinification involves whole-cluster pressing and partial fermentation in barrels, without the addition of sulfites, resulting in a remarkably pure wine.

Our opinion on the vintage

Visually, its slightly rosy golden hue is irresistibly captivating. The nose immediately releases powerful aromas of dried apple, quince, and marzipan. On the palate, this wine is both full-bodied and light, revealing a fleshy structure enhanced by notes of quince jelly and spice. A subtle effervescence brings aromatic freshness with hints of candied lemon and orange peel. The finish is marked by a beautiful intensity, combining vibrant acidity, an elegant lemon astringency, and a delicate bitterness of grapefruit peel. After an experience steeped in Champagne-style winemaking, Jean-Louis Denois identified favorable conditions for growing Pinot Noir and Chardonnay on certain hillsides of Languedoc. Altitude, exposure, and soil type provide an environment conducive to the expression of these grape varieties, rarely associated with the region.

The winemaking process favors a measured approach, focused on freshness and aromatic precision rather than the pursuit of power. The white wines retain a marked tension, supported by discreet mineral expressions, while the reds are built on gentle extractions, resulting in fine and well-integrated tannins.
