The winemaking process emphasizes native yeasts and daily punch-downs for slow extraction, followed by a vatting period of 8 to 10 days. After cold stabilization and fine filtration, it is bottled in December 2023. This artisanal approach yields a pure and delicate wine, ideal for appreciating the true essence of Gamay.
