Château D'Aydie

Les 2 Vaches Rouges

Vin de France | Rouge | NM

The Laplace Family’s wines are crafted with care, from harvest to bottling. Made exclusively from Tannat, this wine undergoes cold pre-fermentation maceration, which preserves its suppleness and fruitiness. Vinification takes place at a controlled temperature to maintain the delicate balance of flavors, and aging in tanks for 6 months ensures natural oxygenation, resulting in a lovely roundness on the palate.

Our Review of the Cuvée

A garnet color with purple highlights. The nose is fruity and crisp, with notes of red berries. On the palate, the wine is supple and round, driven by rich fruit and lovely freshness. An approachable and convivial wine that pairs beautifully with meals, whether it’s duck confit or grilled lamb chops—or, for the more adventurous, a chocolate dessert.

Tannat rarely expresses itself with such mastery as it does at Laplace in Madiran. Extraction is controlled, and the wine is dense yet never overwhelming. The more approachable vintages offer a gentle interpretation of the grape variety. The more ambitious ones display remarkable length. In a nutshell: structure and clarity.
