The stuffed mussels, a mother's dish between land and sea, which brings us to Roussillon, in the small steep streets of the delicious village of Collioure. Domaine Madeloc's Trémadoc cuvée, a white wine of character to sublimate this contrasting agreement.
A greedy nose of buttered, fruity (greengage, yellow lemon), smoky and spicy (cumin) fragrances. An ample and concentrated palate, punctuated by liveliness and controlled bitterness.

It simmered for hours in a pretty cast-iron casserole dish to gradually distil its notes of red wine and bouquet garni. Beef bourguignon, a sweet dish from maman, which deserves a structured and fine vintage.

A mouth which combines a beautiful substance and melted tannins. Then, which stretches in length to leave us a pleasant sensation of jammy black berries.

As soon as it appears in our glass, its golden robe with copper reflections awakens the appetite. Its nose opens gradually on elegant aromas of lemon blossom, fresh almond and candied apricot. Its mouth is just perfect, with a mellow attack, then a fresh and salty finish.
