Carefully crafted, this cider is made from native apple varieties, each pressed separately to ensure an authentic expression of the character of each. Fermentation takes place with natural yeasts in stainless steel tanks for three months, followed by a secondary fermentation in the bottle for two months, resulting in a naturally invigorating effervescence. It all begins here with cider: in Jaxu, in the Basque Country, Arantzazu and Pascale revived old orchards before planting a few vines. Under their guidance, the Tannat and Irouléguy grapes take on a more supple expression than average, driven by generous fruit and a fresh structure. The winemaking is simple, straightforward, and unadorned, allowing the wines to retain a firm texture and clean aromatics.
