This wine is made from Malbec grapes grown on 35-year-old vines planted in Miocene brown marl at an altitude of 350 meters. The grapes are hand-harvested and then vinified naturally with destemming. After a 30-day maceration, the wine ferments in concrete tanks, where it is then aged for six months. This process, without added sulfites, highlights the purity and quality of the terroir.

On the nose, this pure Malbec evokes generous aromas, with well-defined notes of dark fruit. On the palate, the texture is seductive, marked by a natural freshness that testifies to vinification in concrete tanks. The tannins are silky and well-integrated, offering a pleasant roundness that leads to a persistent finish. In Cahors, Fabien Jouves manages Mas del Périé with a precise, plot-by-plot approach to Malbec. The different cuvées are based on the geology of the plateau and hillsides, contrasting limestone soils, which bring verticality and tension, with deeper clays, sources of flesh and density.

Biodynamics structures all the work, from soil management to winemaking. Aging uses a variety of containers—amphorae, foudres, and barrels—employed as tools for adjustment, in order to refine the profiles without masking the expression of the grape or the terroir.

The wines maintain a clear definition, with precise black fruit and structures that are never heavy. The finishes remain legible and balanced, reflecting an approach where each cuvée offers a distinct and coherent interpretation of the different facets of the Cahors plateau.
