Saumur L'îlot des biches 2021

Saumur | Red | 2021

This Saumur red is made from Cabernet Franc grapes grown in Jurassic soils rich in flint and iron. The grapes are harvested by hand, followed by destemming and partial carbonic maceration, which preserves the freshness and finesse of the fruit. Aging in vats contributes to the pure and honest expression of the terroir.

Our opinion on the vintage

Visually, this Saumur red wine reveals itself in a translucent, slightly cloudy, purple hue, imbued with mystery. On the nose, it charms with its subtlety, blending floral aromas of violet and peony with fruity notes of gooseberry and a hint of spice. A delicate smoky and iron touch completes its olfactory complexity. On the palate, it is round and ethereal, with a soft, velvety texture that gradually gains in density. The finish is invigorating, offering a rich and elegant chewiness, with a return of floral and smoky notes, and a lingering aroma of blackcurrant and pepper.

Domaine de l'Enchantoir

Loire | France

Located on the hill of Puy-Notre-Dame, the Domaine de l'Enchantoir cultivates 15 hectares designed as a living ecosystem: vines, trees, hedges, grasses, auxiliary fauna and tuffeau soils make up a coherent and balanced whole.

The philosophy is straightforward: a beautiful bunch of grapes makes a good wine. The work prioritizes manual labor, the planting of carefully chosen cover crops to nourish the soil and strengthen its structure, and harvesting entirely by hand. Interventions in the cellar remain minimal, allowing the grapes and the terroir to express themselves fully.

The wines are aged primarily in century-old concrete vats to preserve their aromatic complexity and supple texture. They are vibrant yet precise, generous without being heavy, with a quiet depth and true clarity.

A field guided by common sense, attention to living things and a search for sustainable balance.
