- Could you tell us about your estate, Domaine Dominique Gruhier?
Dominique Gruhier: We are located in Burgundy, in the Yonne department, and more specifically in the Tonnerrois region. Our estate covers 27 hectares surrounding a magnificent “Cistercian barn” (a former outbuilding of the abbey) founded in 1212.
- Your estate is located in the Tonnerois region. What are the characteristics of this region, and what makes your wines unique within the Tonnerois?
D.G: Indeed, the Tonnerrois region has its own distinct characteristics. The vines are rooted in Jurassic geological layers that give the wines a unique minerality, while the clay soils lend them a lovely roundness. Tonnerre white wines are both fresh and rich, with exotic and floral aromas. Epineuil red wines are full of finesse, fruity yet with characteristic notes of subtly smoky spices and flowers. They are very easy to drink.
“My childhood smelled of cellars and the bottoms of bottles”
- How did you become a winemaker?
D.G.: My maternal grandfather was a wine merchant in the Côte d’Or, as were two of my uncles. Needless to say, my childhood was filled with the scent of cellars and the dregs of wine bottles. After studying mechanical engineering, I wanted to learn more about this profession, and it was a revelation. After earning my associate’s degree, I had the opportunity to settle down with my father on the land in Epineuil, where we’ve been based ever since.
- What has wine taught you about life?
D.G: Humility, patience, detachment, the joy of sharing, but also the delicate balance between culture and nature.
- Is there a winemaker who inspires you?
D.G: Mainly winemakers: Sylvain Pataille for his uncompromising dedication and his delicious wines, Lalou Bize-Leroy for her bold and utterly innovative approach, Thomas Picot for his mastery of minerality, and so many others. And all those whose wines really come alive…
- How would you describe your approach to wine in three words?
D.G: Enjoyment, surprise, and a friendly atmosphere.
- What's your favorite food-and-wine pairing?
D.G: Cheese and wine, without a doubt.
- What's your favorite wine?
D.G: There isn't one in particular, but rather a whole family—that of red Burgundies.
