Thierry Germain manages to bring out the best in Cabernet Franc in this cuvée. The grapes are hand-harvested and meticulously sorted before being gently conveyed to the vats via a conveyor belt. Controlled fermentation in stainless steel tanks maximizes aroma extraction, while aging on fine lees in both wooden and stainless steel tanks preserves the wine’s freshness. A respectful approach to the terroir ensures a vibrant and balanced final product.

Our Review of the Cuvée

Visually, this wine displays a deep ruby color that immediately evokes elegance. The initial nose reveals notes of candied raspberry, accented by a hint of white pepper and a subtle hint of licorice. On the palate, the texture is initially silky and light, before becoming denser to offer a full-bodied and velvety sensation. Fresh fruit bursts forth from the very first sip, while a riper, spicier dimension slowly develops, creating a harmonious balance that lingers through the finish.

Located in Saumur-Champigny, Domaine des Roches Neuves has been managed by Thierry Germain since 1992. The estate extends over calcareous and clay-limestone soils, which are particularly well-suited for Cabernet Franc, as well as Chenin for its white wines.

From 2002, the estate committed to biodynamic practices, involving extensive work on the soils, vine vitality, and yield management. This approach aims to produce balanced grapes that can accurately express their origin without artificial intervention in the cellar. Winemaking prioritizes measured extractions and work on the must to preserve the fruit and the natural energy of the juices.

Aging processes are conceived as supportive tools, selected to respect the wine's structure and its expressive capacity, without aiming to dictate the style. The wines are distinguished by their fruit purity, precision, and a sense of controlled tension, all while retaining genuine depth.
