Saint-Bris
South of Auxerre lies a unique terroir: only white wines are produced here, and Saint-Bris is mentioned in Latin writings as early as 280 AD. This marvel, which nearly perished due to mildew in 1910, can still be enjoyed today. Spanning only 103 hectares, it is one of the five appellations of the Auxerre wine region. The main grape variety is Sauvignon Blanc, unlike its Burgundian cousins, which use Chardonnay. Its color is pale, and the nose reveals very mineral, sometimes intense, aromas. In some exceptional wines, one can detect fruit such as citrus or raspberry. On the palate, Saint-Bris is very lively, and thanks to the Sauvignon Blanc grape, it develops a certain sweetness with age. It can be cellared for up to six years before being enjoyed.
