All about Saint-Bris
South of Auxerre lies a unique terroir, exclusively producing white wines. Saint-Bris was first documented in Latin writings as early as 280 AD. This remarkable wine, which nearly vanished due to downy mildew in 1910, can still be savored today. Spanning only 103 hectares, it is one of the five appellations within the Auxerrois Vineyard. The primary grape varietal is Sauvignon Blanc, distinguishing it from its Burgundian Chardonnay counterparts. It presents a clear hue; the nose reveals highly mineral aromas, occasionally intense, with exceptional wines exhibiting fruit notes such as citrus or raspberry. On the palate, Saint-Bris is notably lively, and thanks to the Sauvignon Blanc varietal, it develops a certain mellowness with age. It can be cellared for up to six years before consumption.
