How do you make white wine?

The basis of white wine is simple: white or red grapes vinified without their skins. Why? Because it's the pigments in the skins that color the wine, so separating them from the juice produces lighter wines. The winemaking technique greatly influences the final style:

• Dry white wine : gentle pressing, low temperature fermentation to retain freshness and fruity aromas.

• Sweet or dessert white wine : very ripe grapes are used, sometimes dried on the vine or after harvesting, which concentrates the sugar and aromas.

• Aromatic white wine : some grape varieties such as Muscat or Gewurztraminer naturally give intense notes of flowers, fruits and spices.

• Sparkling or effervescent white wine : the second fermentation creates the bubbles, whether they are fine (traditional method) or soft and fruity (Charmat method).

Grape varieties and their influence

• Chardonnay : from Burgundy to the South of France, it can be lively and mineral or rich and round, often aged in oak barrels for notes of vanilla and butter.

• Sauvignon Blanc : lively, aromatic, with notes of citrus and white flowers, typical of the Loire.

• Chenin : flexible, it can produce fresh and lively wines, or mellow and complex wines, often with minerality.

• Riesling : aromatic and mineral, perfect for revealing the terroir, especially in Alsace.

The role of the terroir

The terroir—that is, the soil, climate, and exposure—greatly influences the taste of wine. A Chardonnay from Burgundy grown on limestone soils will be taut and elegant, while a Chardonnay from Languedoc grown on sun-drenched clay-limestone soils will produce rounder, more luscious wines. The Loire Valley produces fresh and aromatic white wines, while Alsace favors aromatic purity and finesse. In the South, the sun concentrates sugars and aromas, resulting in richer, sunnier wines.

Food and white wine pairings

White wine is very versatile at the table:

• Fish and seafood : opt for a dry and crisp white wine to enhance the flavors.

• Poultry or white meats : an aromatic or slightly oaky white wine will work wonders.
