This wine is made from Chardonnay grapes, harvested at perfect ripeness. The juice is concentrated through slow cooking before being blended with the estate's own pomace and brandy, resulting in an exceptional wine with an oxidative style. Aging in unprotected oak barrels allows for the development of complex aromas. The balance between the grapes' natural acidity and the sweetness of the sugars makes it a true delight to taste.

In the Jura region, Tony Bornard has developed a personal approach to the area's emblematic grape varieties, notably Savagnin, Trousseau, and Poulsard.
