This wine is made entirely from Chenin Blanc grapes, hand-harvested to ensure optimal quality. Vinification begins with fermentation in large oak casks and barrels, respecting the minerality of the terroir. Pneumatic pressing lasts four hours, and aging on fine lees extends over nine months, giving the wine beautiful complexity and a silky texture. This approach emphasizes the purity and elegance of Chenin Blanc.

Domaine Des Roches Neuves
In Saumur-Champigny, the Domaine des Roches Neuves has been run by Thierry Germain since 1992. The estate extends over limestone and clay-limestone terroirs, particularly suited to cabernet franc, as well as chenin for white wines.
Starting in 2002, the estate embraced biodynamic farming, with in-depth work on the soils, vine vitality, and yield control. This approach aims to produce balanced grapes, capable of accurately expressing their origin without artifice in the cellar. Vinification prioritizes measured extractions and a focus on the body of the wine to preserve the fruit and the natural energy of the juice.
The winemaking process is conceived as a complementary tool, chosen to respect the wine's structure and its capacity for expression, without seeking to influence the style. The wines are distinguished by their purity of fruit, their precision, and a sense of controlled tension, while retaining genuine depth.
