The stony soils yield slightly shriveled grapes. The harvest is destemmed and left to macerate for a month and a half. The juice is then transferred by gravity to barrels for 18 months of aging, during which it is topped up 4 to 5 times.
The wine is then racked from the barrels and returned to the main vat. Natural clarification occurs through two to three rackings before bottling.

Located in Bué, in the heart of the Sancerre region, Domaine Les Terres Blanches benefits from a rich diversity of soils: the famous deep, structuring white clay-limestone soils; the lighter, well-draining caillottes; and clay-siliceous areas that impart tension and vibrancy. This mosaic is directly reflected in the wines, with expressions that are always distinct but never uniform.

Sauvignon Blanc reigns supreme here, and is produced with great finesse. On the white soils, it gains body and depth, with a more enveloping texture. On the gravelly soils, it becomes livelier and more straightforward, with an almost sharp freshness. Aging, sometimes in barrels, enhances the wines without ever masking their origin, adding depth and a beautiful texture.
