Our Review of the Cuvée

The color is a cloudy pale yellow. The nose is fresh, with notes of warm apple, lemon zest, and damp chalk. The palate is round, full-bodied, and enveloping, with a luscious, almost velvety texture, invigorated and refreshed by thousands of bubbles as crackling as they are creamy. The finish is intense and explosive, rated triple A++, with intense bitterness of citrus peel and cinchona, and a tart astringency of lemon pulp that lingers for a long time.
