Château D'Aydie
Château d'Aydie 2021
Pacherenc Du Vic-Bilh | Blanc | 2021
This wine is made from the Petit Manseng grape variety, grown on clay-gravel soils with optimal sun exposure. Hand-harvesting ensures careful selection of the grapes, which are picked at full ripeness. After slow pressing and cold settling, the wine is aged on its lees in barrels, enhancing its aromatic complexity. Bottling follows a 10-month aging period, allowing the full richness of the terroir to be preserved.

Our Review of the Cuvée
From the very first glance, this wine’s silvery-yellow hue captivates the eye with its radiant brilliance. On the nose, a seductive blend of fresh pineapple and ripe apricot aromas unfolds, enhanced by subtle honeyed notes. On the palate, the texture is both smooth and enveloping, with a finish marked by citrus notes delicately enhanced by a lingering hint of vanilla. This wine pairs perfectly with refined foie gras or fruity desserts, combining freshness with aromatic intensity.

Tannat rarely expresses itself with such mastery as it does at Laplace in Madiran. Extraction is controlled, and the wine is dense yet never overwhelming. The more approachable vintages offer a gentle interpretation of the grape variety. The more ambitious ones display remarkable length. In a nutshell: structure and clarity.
