What to Drink When Modernizing the Spritz?
Another reason the Spritz cocktail is so popular is its many variations—so much so that if you order one, you’ll likely be asked, “Which one?” Don’t panic! Here are a few recipes for this cocktail that has been taking over our outdoor seating areas for several years now:
The "Misto" Spritz, for those who can't decide
Can't decide between Campari and Aperol? The "misto" spritz is just the thing for you! Instead of the traditional two parts Aperol, use just one. Then add one part Campari.
The "Made in France" Spritz cocktail for nationalists
If you’ve given up on bitter liqueurs for good and your legendary patriotism compels you to drink something “made in France,” all you have to do is mix red, white, and sparkling wine with sparkling water.
The Original Spritz

The original recipe calls for a splash of sparkling water, 3 parts Prosecco, and 2 parts Aperol—which you can substitute with Campari if you prefer a less sweet drink, or with Cynar for a bolder bitterness. Pour everything into a rocks glass or wine glass, and don’t forget the ice cubes and a slice of orange or a green olive.
Spritz Soup, for Special Occasions
On special occasions, you can substitute Champagne for Prosecco.
The Spritz at Select: the authentic Venetian version
Mix Prosecco and “Select” sparkling water—the Venetian citrus liqueur recognizable by its label featuring a gondola silhouette on a blue background—and add a slice of lemon to bring out the cocktail’s bitterness.
"The 'natural' option, for those who want to avoid any hassle"
You might be trying to force yourself to like it just because it’s trendy, but the Spritz just isn’t your thing? In that case, we recommend the classic Spritz, made with one part dry white wine, one part sparkling mineral water, and a twist of lemon.
