Diary #3: You're probably wondering what the symbolism is behind the spiral on our corks ? I'll explain the reasons behind this choice of a signature cap for our champagne bottles, and also why we planted 82 trees in our botanical garden!
Clos Rocher, or my father's dream come true
At my father's initiative, our Clos Rocher vineyard was established in 2012 – one of the few walled vineyards in Champagne . It is located in the commune of Les Riceys, a renowned center of Champagne production. The 1.4 hectares of Pinot Noir boast the best south-southeast exposure. It is part of our ongoing commitment to moving upmarket and will produce the House's most prestigious cuvée in 2017.
This little gem boasts a charming cadole at the top of its hill. Historically, "cadole" was the name given to the old vineyard huts in the Aube region of Champagne and southern Burgundy . Cadoles were often built with dry stones removed from the vines during their creation or maintenance. They served as shelters for the winegrowers. Our cadole is more spacious, comfortably accommodating 8 to 10 people around a table, with a breathtaking view of the Clos Rocher vineyards.

With this very special botanical garden, we wanted to pay tribute to our beginnings in exporting in the early 1980s, to the many French embassies abroad, long-standing clients of the house, and also to send a message of continuity to future generations.
The spiral of the Champagne Gremillet headdresses, a powerful symbol
Another powerful symbol: we've added a spiral to our foil capsules (the capsules are the coverings that protect the corks and their wire cages) so that our champagne bottle is easily recognizable when it emerges from an ice bucket. Thinner at the top of the neck, it widens as it reaches the shoulder of the bottle. This spiral symbolizes life's journey with its ups and downs, its small and great successes, but also self-fulfillment and reaching out to others. These are beautiful values of optimism and openness that are central to our House and resonate even more strongly in the current context…
