This wine, a blend of Bobal and Tempranillo grapes, comes from certified organic vineyards located at an altitude of 900 meters. The 35-year-old vines benefit from a terroir rich in red clay and an influential Mediterranean climate. Winemaking employs modern techniques, including cold pre-fermentation and controlled fermentation with skin contact, followed by malolactic fermentation in stainless steel tanks to preserve the aromas.

After an experience steeped in Champagne-style winemaking, Jean-Louis Denois identified favorable conditions for growing Pinot Noir and Chardonnay on certain hillsides of Languedoc.
