Vin de France | Red | 2019

Careful winemaking with meticulously destemmed and sorted Cabernet Franc grapes results in a high-quality product. The whole-berry fermentation is carried out without sulfites, with a long maceration and gentle pressing, ensuring a delicate extraction. Six months of aging in oak barrels adds another dimension to this wine. All of this contributes to a balanced and harmonious wine, fully respecting the principles of organic and biodynamic farming.

Our opinion on the vintage

From the first glance, this wine displays its personality with a deep, translucent garnet color. On the nose, it expresses striking freshness with delicate aromas of blackcurrant, cubeb pepper, and a touch of menthol, complemented by a subtle, intriguing animal note. On the palate, it reveals a round and enveloping texture, with a velvety feel and vibrant fruit subtly balanced by volatile acidity. The finish, harmonious and concentrated, is full of tension, with a gradual build-up of blackcurrant and menthol flavors. A wine that delights with its complexity and freshness.

Languedoc | France

After an experience steeped in Champagne-style winemaking, Jean-Louis Denois identified favorable conditions for growing Pinot Noir and Chardonnay on certain hillsides of Languedoc. Altitude, exposure, and soil type provide an environment conducive to the expression of these grape varieties, rarely associated with the region.

The winemaking process favors a measured approach, focused on freshness and aromatic precision rather than the pursuit of power. The white wines retain a marked tension, supported by discreet mineral expressions, while the reds are built on gentle extractions, resulting in fine and well-integrated tannins.

The winemaking process remains restrained and tailored to each vintage, with the aim of complementing the wine without influencing its character. The result is a balanced and coherent expression of these Languedoc terroirs, emphasizing precision and clarity rather than a demonstrative interpretation.
