This organic, sulfite-free wine is crafted with meticulous care to avoid any flaws. Made from Syrah and Grenache grapes, it is the result of a thoughtful winemaking approach and a bespoke vinification process. The grapes, hand-harvested at optimal ripeness, undergo gentle or carbonic fermentation depending on the variety, before aging for seven months on their lees in stainless steel tanks, thus preserving the fruitiness and guaranteeing perfect purity.

From the first glance, this wine captivates with its intense purple hue. The nose opens with aromas of candied black fruit, complemented by notes of garrigue and an intriguing balsamic touch. After an experience steeped in Champagne-style winemaking, Jean-Louis Denois identified favorable conditions for growing Pinot Noir and Chardonnay on certain hillsides of Languedoc.
