Our Review of the Cuvée

To the eye, a translucent purple hue already hints at its finesse. The delicate nose blends aromas of candied red and black fruits, violets, and spices, gracefully giving way to a palate that is both elegant and velvety. A silky texture envelops a rich, fruity bouquet with resinous and balsamic nuances evoking the garrigue, licorice, and eucalyptus. On the finish, the complexity intensifies, leading to a spiced cherry compote prolonged by notes of bay leaf and balsamic vinegar for a captivating finish.

Following extensive experience with Champagne methods, Jean-Louis Denois identified favorable conditions for cultivating Pinot Noir and Chardonnay in certain Languedoc hillsides. Altitude, aspect, and soil composition here provide an ideal environment for the expression of these grape varieties, which are rarely associated with the region.

Vinification favors a measured approach, focusing on freshness and aromatic precision rather than pursuing power. White wines retain a distinct tension, supported by subtle mineral expressions, while reds are crafted with gentle extractions, yielding fine and well-integrated tannins.
