This cuvée is crafted from pure Syrah, sourced from certified organic old vines, meticulously trellised and hand-harvested to ensure optimal yield. The vinification process prioritizes gentleness, featuring meticulous destemming and no crushing, leaving the berries whole in the tank. Six months of barrel aging refines the tannins, followed by bottling in our Limoux cellars, ensuring a final product of exceptional quality.

Following extensive experience with Champagne methods, Jean-Louis Denois identified favorable conditions for cultivating Pinot Noir and Chardonnay in certain Languedoc hillsides. Altitude, aspect, and soil composition here provide an ideal environment for the expression of these grape varieties, which are rarely associated with the region.
