Domaine Pignier
Vin jaune 2018
Côtes du Jura | Blanc | 2018
This wine, produced using biodynamic methods and certified by Demeter, is the result of meticulous, environmentally responsible craftsmanship. The Savagnin grape, grown on clay-limestone marl, gives the wine its unique character. Fermentation takes place in cool cellars, followed by seven years of aging in oak barrels under a veil of yeast, without topping up or racking. This traditional process, which involves no oenological additives, guarantees exceptional authenticity and purity.

From the moment it’s opened, a brilliant golden color heralds a complex and refined nose, dominated by aromas of nuts and citrus. On the palate, with elegant intensity, it reveals lingering nutty flavors accompanied by subtle spicy notes. This distinguished wine, with its silky texture, offers remarkable length, making it perfect for enhancing fish dishes, meats in sauce, or bold cheeses. Domaine Pignier
Jura | France
At their renovated monastery in Montaigu, the Pignier family crafts a precise, demanding Jura wine using strict biodynamic methods. The wines—whether topped up with water or not—display a keen eye for detail: tension, minerality, and structure. Long aging in large oak casks lends a serene depth. In a nutshell: a very pure style. A fascinating estate.
