À la (re)découverte du vin blanc
Le vin blanc c’est une douceur. Parfait à la fois pour l’apéritif, pour vos produits de la mer et aussi pour vos desserts. La diversité des cépages du vin blanc : chardonnay, chenin, riesling, mucat offre une diversité des types de vin blanc.
Des vins blancs secs au vins blanc doux en passant par les pétillants, il y aura forcément de quoi vous régaler ! Les vins blancs secs
C’est le type de vin blanc que vous aimez le plus en ce moment ! Ces vins sont frais, pas du tout sucrés et font la part belle à la minéralité. On peut trouver ce type de vin dans la plupart des régions françaises.
La Bourgogne notamment, ne produit que ce type de vin. Ils sont issus du Chardonnay (à 95%) et de son proche cousin l’Aligoté. Le Chardonnay est un cépage très polyvalent et qui a su conquérir le monde. Il s’exprime sur des notes de fruits comme la poire ou la pomme et les fleurs blanches.
Le vieillissement en fût a beaucoup d’impact sur ce cépage. C’est justement ce qui a fait la célébrité des vins de Bourgogne ! Ils offrent aussi des notes de brioche ou de beurre très gourmandes. Les appellations blanches qui ont fait la réputation de la Bourgogne sont Chablis (du Petit Chablis jusqu’au Chablis Grand Cru), Chassagne-Montrachet et Pouilly-Fuissé.
On retrouve le Chardonnay dans de nombreuses autres régions de France désormais, comme le Beaujolais ou le Languedoc.
La Loire utilise un autre cépage, moins connu mais en plein essor : le chenin blanc. Il est utilisé aussi bien pour faire des vins secs que moelleux. Les vignerons de cette région apprécient également d’autres cépages comme le muscadet ou le melon de Bourgogne.
Dans tous les cas, ce sont des vins frais et iodés, idéals pour l'apéritif ! Les appellations blanches les plus célèbres de cette région sont Touraine, Saumur et Pouilly-Fumé.
Dans le Bordelais, deux appellations sont les portes étendards des vins blancs secs. L’Entre Deux Mers et Bordeaux sec (ça ne s’invente pas). Ces deux appellations utilisent le sauvignon blanc en grande majorité. Bien sûr, d’autres appellations bordelaises produisent des vins blancs.
Les vins blancs moelleux
Bien que moins "passe-partout'' que les vins blancs évoqués ci-dessus, les vins moelleux, c'est-à-dire sucrés, ont encore de beaux jours devant eux. Et pas seulement lors des fêtes comme Noël !
Certaines régions se sont fait une spécialité des ces vins difficiles très difficiles à produire. On vous expliquera pourquoi juste après, voyons d’abord quels sont ces vins !
L’Alsace est devenue célèbre pour produire des vins moelleux. Pour cela, ils utilisent deux cépages particuliers : le Gewurztraminer et le Riesling ! Le premier s’exprime surtout sur des notes de fruits tropicaux. Le second présente surtout des notes de litchi et de rose.
Ils peuvent se décliner sous la forme de Grand Cru, dont la garde peut atteindre des dizaines d’années sans difficulté.
La deuxième région la plus célèbre pour ses vins moelleux à déjà été évoquée plus haut. Il s’agit de Bordeaux bien sûr ! C’est sûrement là que l’on peut retrouver le plus grand et célèbre vin moelleux du monde : le Sauternes. La méthode de production des vins de Sauternes implique des rendements très faibles et demande beaucoup de vigilance aux vignerons.
Bien que beaucoup moins connus, le bordelais abrite aussi les AOC Barsac, Cérons, Loupiac, Cadillac et Sainte-Croix-Du-Mont.
La Loire n’est pas en reste non plus. Comme Bordeaux, elle est polyvalente et sait aussi produire des vins moelleux. C’est le cas des AOC Coteaux du Layon et de Vouvray.
Enfin, c’est tout au sud de la France que nous trouverons les derniers vins blancs de ce type. Nous pouvons citer les appellations Haut-Montravel, le Gaillac, le Monbazillac et le Jurançon.
Comment produire un vin blanc moelleux ?
Le vin blanc moelleux est obtenu à partir de processus spécifiques de vinification. La sélection du grain de raisin, lors des vendanges dites blanches, est très importante.
Pour obtenir une forte concentration en sucres résiduels (c’est-à-dire en sucres restants après fermentation), les vignerons ont le choix entre plusieurs techniques :
La récolte de grains atteints de pourriture noble, comme à Sauternes.
La récolte tardive, très pratiquée en Alsace.
Les grains gelés (le gel permet une meilleure concentration en sucre) . Cela s’appelle alors un vin de glace
Le dessèchement des grains après vendange, comme avec le vin de paille dans le Jura
Que manger avec un vin blanc ?
Comme le vin rouge, le vin blanc s'accorde avec de nombreux plats. Avant toute chose, comment ne pas penser aux fruits de mer. Pour cet incontournable duo vin blanc fruits de mer, on vous conseille un vin sec qui suivra bien les notes iodées des moules, ou encore des huitres. Orientez-vous vers un vin de Chablis ou un Chardonnay du Languedoc.
Pour un poisson d'été grillé au barbecue, optez pour un blanc fruité, d'Alsace ou de Loire.
Avec une viande blanche, comme un poulet rôtis, nous vous recommandons un vin blanc plus sec et puissant, comme ceux de Bourgogne. Tournez-vous vers un vin de Puligny-Montrachet ou Santenay.
Enfin, comment oublier le traditionnel accord de noël : vin moelleux et foie gras ! Un véritable plaisir.
